We may have made our best dinner yet: Saffron Risotto and Sea Scallops. We made a saffron risotto a couple weeks ago and other risotto recipes lately (we got a risotto cooking book for Christmas), but we were using store-bought vegetable stock. What were we thinking? So, yesterday, Andrew made a vegetable stock from scratch! It was beautiful! And our sea scallops were seared in a truffle sauce. It was a seriously delicious dinner. Hope you had a nice weekend too!
