Weekend.
This weekend went by too fast but it was nice. We spent time around the house rearranging rooms and doing a little pre-spring cleaning. Also visited with family, cooked (a lot) and made some donations to Goodwill. Yesterday, while on a neighborhood walk with the family, I witnessed the prettiest, pinkest, most vibrant and captivating sunset I've ever seen. My photos didn't do it justice. It was unreal. I, of course, made a huge deal out of it. I felt lucky to have caught it. Yesterday was an overall lucky day for me, I made a delicious breakfast that was "the best breakfast Andrew's ever had," which is a huge compliment. I'll share my secret, in one pan, I had veggie maple sausage patties cooking and in another, I heated up black beans and black olives, added eggs, and then right before they were done cooking, I added small bits of ricotta cheese. I served them with sour cream, salsa, and cilantro. Not sure why or how it could be so good with such basic ingredients, but it was! I'm on a cooking roll. That's about it.
